Our family dynasty has been carved out over countless pots of coffee and tea since the mid 17th century - long before espresso or tea bags were even a thought. It definitely runs in our family blood!

We envision our customers sipping and sharing coffee and tea with sparks of joy and celebration. Our hope is to provide that liquid substance that is the common ground for strengthening relationships and instilling greater health and vitality. Our coffee is grown and harvested in the most natural way possible. We exclusively use defect-free, mold-free, "Specialty Grade" coffee beans that score 86 or above. While some of it may not be "certified" organic, it is grown using biodynamic farming techniques as much as reasonably possible. This grade of coffee is used in less than 1% of the coffee produced worldwide. Our meticulous selection process eliminates the risk of introducing mold or toxins to your cup of joe. It's as clean as coffee gets! While other roasters might cut corners with lower grade beans to save costs, we prioritize quality above all else for your health and pleasure.

Our tea's are grown in the most natural growing conditions on family tea farms by workers who are proud of their master-crafting skills and commitment to sustainability. We support organic and biodynamic tea farming and have found that "small-batch" teas produce far greater flavor and vitality than commodity tea sold by the vast majority of tea companies. We strive to procure teas from master tea artisans and farmers who are transforming the practices of agriculture to renew the vitality of the earth, the integrity of our food, and the health and wholeness of our communities. James has been procuring, packing, shipping, teaching, and brewing tea for literally thousands of happy customers for over 20 years and has developed solid relationships in the industry.

100% Air Roasted! 100% Clean Beans! Less than 1% of coffee worldwide is air roasted on a fluid bed of hot air rather than spinning in a hot metal drum roaster - It's no surprise you've never heard of it. Ever After guarantees a smoother, richer, and cleaner roast every batch. Our air roasting technology removes the burnt by-products found in other coffees by separating the chaff from our specialty-grade beans as they flow gracefully around on a fluid bed of hot air.

You will probably never see a “ring” around your cup of coffee with our beans, and it is highly unlikely to upset your stomach. You can expect high quality coffee with no carcinogens.

We take great care to highlight the sweet and smooth characteristics of each coffee while maintaining their complex flavor profiles. We roast the old-fashioned way: In small batches, limited automation, each bag filled by hand.

With Air Roasted coffee you taste the coffee, not the roaster because it’s the air that roasts the coffee beans, not the metal surface of a roasting drum. The result is coffee with a very clean taste that is intensely aromatic. It’s also less bitter and less acidic.

Bitterness and sour stomach are the biggest complaints of coffee drinkers.

Air roasted coffee is gentle on the stomach! Since the fluid bed roaster can reach higher temperatures in half the time of typical cylindrical roasters, the time for the negative acidic compounds to form is greatly reduced. Therefore it doesn’t cause the sour stomach that some coffee drinkers complain about.

As tea snobs, we could probably list 50 reasons why we prefer loose leaf (whole leaf) tea over tea bags, but here's a few that top our list of reasons why everyone should be brewing loose leaf tea rather than tea bags.

Maximum deliciousness - Whole tea leaves open more fully as they infuse (brew) in hot water, creating a greater, gradual, and more complex release of flavors and aroma's compared to cut leaves. For decades, the teabag industry has cut and refined tea to jam it into little teabags. By filling teabags with smaller particles of tea (dust and fannings), manufacturers were able to maximize profits and lower the standards of the quality of tea needed for bags. With a teabag the surface area and infusion rate of the tea is increased. A strong (though not always delicious) brew resulted. It was profitable and good enough for the average “milk and sugar” tea
drinker.

Creative freedom - It's the ultimate blank canvas. You can mix and match different varieties, you can add more to make it stronger and less to make it weaker. And as a tea snob you can use specifically designed tea brewing gear to maximize the tea drinking experience and create the perfect brew!

Multiple infusions - Some of our Pu-erh teas can be re-infused (brewed) up to 12 times using the same tea leaves! Each infusion brings out different complexities of flavor, color, and aroma. The multiple infusion brewing process not only saves money (less tea used) but increases the health benefits by bringing the tea to complete extraction.

Loose leaf means less plastic and toxins - Many commercial tea bags are manufactured using plastics that can harm your health and the environment.

The phrase "ever after" is commonly understood to mean a time extending indefinitely into the future, often implying a state of lasting happiness. In a broader sense, "ever after" conveys the idea of permanence, continuity and an unchanging, positive outcome.

We brought the name Ever After to our coffee and tea company because it reflects the ageless nature of our relationship as husband and wife. We were destined to be together but didn't know it until we met as mature adults. And now that we know it, it's as if we've always been together - unbound by time.
