The Story Of This Tea:
Brandy Oolong AKA Gui Fei, is a remarkably distinctive and unique Taiwanese tea! It has a most intoxicating Wild Honey character combined with a sophisticated mineral profile. It is a divinely sweet comforting taste! It has undergone a 3 stage baking process with air-tight mellowing breaks of several weeks in between - requiring a tea masters expertise. This allows the flavors and aromas to stabilize and fully permeate the leaves. In some ways it is similar to the traditional Dong Ding oolong processing techniques.
"Gui Fei" is notable as the leaves are nibbled on by special little "green leaf hoppers." The tea plant responds by releasing more polyphenols into the leaves, and begins an early stage of oxidation resulting in added sweetness and complexity in your cup.

This tea produces virtually no astringency and falls somewhere between a roasted oolong and mild black tea. If you over steep it, don't worry, it's going to be just fine.
Brewing advice -
Water temperature: 200-205 degrees (just below boiling)
Number of infusions: 3 to 10 - begin with short infusions (20-40 seconds) until you learn how this tea responds. Each infusion creates a unique flavor profile.
