Cup Profile: Chocolate tort, caramel, toasted nut, golden raisin
When I prepared this as a pour-over, I also noticed flavors of tangy golden raisin, hints of orange, brown sugar, and something like bittersweet chocolate torte. Having served this at multiple events and church services, I've learned that GOODNESS is definitely a crowd-pleaser.
GOODNESS is a delicious small-producer blend made up of coffees from neighboring villages in Inzá, Cauca. While the regions are hardly neighboring each other, the veredas ("villages") where they were pulled from are. The bulk of the coffee is from a buying operation in San Antonio, within the Southwestern Colombian region of Inzá de Cauca.
Like much of Colombia, Cauca is home to very high altitude farms, many above the 2000 meter mark. The coffees that make up this lot were harvested from an altitude range of about 1500 to 2000 meters.
This is a wet-processed (washed) specialty grade coffee, most farmers using old style hand-cranked pulpers, fermenting and washing in the same tank, and then drying on covered patios or drying beds.
- Wet Process (Washed).
- Covered Sun-Dried.
- Cultivars: Bourbon, Caturra, Typica, Variedad Colombia.
- Estate grade.
GOODNESS is a real crowd-pleaser! It's what we serve for events, conferences, and large gatherings for a few reasons. 1) It can be brewed and sit in an Airpot for 2-4 hours and still taste great. 2) It's forgiving; if the brewing ratio's are off a little, it still tastes consistently great. 3) It makes a great cold coffee - if there's any leftover we just put it into the fridge and enjoy as an iced beverage. 4) It's not too dark, and not too light, so it pleases the general population... making it perfect whether a person adds cream or drinks it black.
The vibrancy and balance of this perfectly roasted cup causes a chaotic world to quickly fade away.
How much brewed coffee will this make? You can figure that one 12 oz bag = about 25-30 8 oz cups of coffee.
Brewing recommendations:
Use clean, chemical-free water with some mineral content. Freshly grind your coffee beans when possible to match your brewing method using a burr grinder.
Keep brewing equipment clean. Store coffee beans in an airtight container away from light, heat, and moisture. Do NOT refrigerate your coffee unless it is sealed in an airtight bag and you plan on not using it for several months.
The CUP PROFILE is the natural expressions of the plant with proper roasting - no flavor is added.
