Cup Profile: Dark chocolate pistachio, creamy nut, dried berry, toffee

This "California dark" roasted espresso blend is sourced from an old Brazilian estate that dates back more than 150 years in the family of Maria Dorotéia, who currently manages operations. The farm is 800 to 1200 meters above sea level and is planted in Red Catuaí, Rubi, Arara, Catucaí, and Mundo Novo (some of the Mundo Novo was planted 45 years ago). They have roughly 120 hectares planted in coffee, and like most of the coffee farmers we visited, are also invested in dairy ranching - "coffee and cream", as they like to say. This family farm is driven by sustainability, and has taken steps to move away from non-organic inputs by using an organic fertilizer she makes from straw, ash, and manure, and planting ground coverage to help protect the soil.

There's a fruited top note in LEGACY that causes it to stand out from other Brazil beans. Dry process Brazil coffees aren't always fruity, often veering toward bittersweet/creamy profiles that make them a good source for espresso. Legacy lies somewhere in between, with creamy nut and cocoa, as well as fruited accents. The fragrance and aroma has complex cocoa and raw sugars, accented by a note of dried fruit, like date pieces. The wet aroma shows more of a molasses-like sweetness and almond bars. This City+ roast is thick-bodied, reverberant bass tones of dark cocoa, and drinking chocolate, accented by dried cherry.

LEGACY California Dark roast is excellent for espresso, French press, drip, AeroPress, and espresso drinks and/or if you typically add a creamer to your coffee. 

How much brewed coffee will this make? You can figure that one 12 oz bag = about 25-30 8 oz cups of coffee.

Brewing recommendations:

Use clean, chemical-free water with some mineral content. Freshly grind your coffee beans when possible to match your brewing method using a burr grinder.

Keep brewing equipment clean. Store coffee beans in an airtight container away from light, heat, and moisture. Do NOT refrigerate your coffee unless it is sealed in an airtight bag and you plan on not using it for several months.

The CUP PROFILE is the natural expressions of the plant with proper roasting - no flavor is added.
