Flavor: Roasted sweet potatoes, red berries, guava, complex citrus notes, caramelized figs, honey like aroma, well balanced between its flavor and the lingering champagne-like after taste. Distinctive for its soft but pronounced flavor.

Story: This thick yet crystal clear brew is an unusual "Dan Cong" tea which has been processed and fully oxidized making this a black tea rather than an oolong. When manufactured as a black tea these oolong varietals present a gentler, less astringent side of the black tea flavor profile. This tea bears remarkable similarities to famous Pheonix Mountain Dan Cong oolongs, but perhaps more multidimensional. The aroma is fruity with a little metallic quality. Although it can be brewed as very strong infusions, we suggest beginning with a 20-30 second infusion, adding more time for each subsequent infusion, and experiencing many rounds of uniquely complex flavors and aromas.
This White Leaf (Bai Ye) Dan Cong is grown in Ling Tou village in the northern area of Raoping County (Guangdong Province). Bai Ye Dan Cong varietal plants are special in curved large appearance with light yellow-green crowns.
We've consistently noticed this tea having a strong, smooth cha chi.

Water temperature: 205 degrees (just below full boiling)
Number of infusions: 5 to 12. Each infusion creates a unique flavor profile.
