The Story Behind This Tea:
White Pekoe Silver Needle tea is first flush spring harvest! The infused brew is very white and laden with lots of hairs from these buds. This is a very special tea handcrafted from Jinggu Yang Ta Large Leaf varietal tea - Camellia Taliensis. The tea leaves are picked in the early spring, wilted ever so slightly and then dried to perfection in warm wind tunnels.
White tea is minimally processed... the leaves are literally plucked and dried, that's it! So the tea is very pure and also relatively high in caffeine, as is all whole leaf white tea.
"Pekoe" typically means tea made from the youngest leaves yet slightly larger than the tips. Pekoe leaves are typically the third leaf from the top (tip) on the branch.
Brewing advice -
Water temperature: 170 degrees (far below boiling)
Number of infusions: 3 to 8. Each infusion creates a unique flavor profile.
